New Tomato Rice: Ingredient: 1C rice washed in 4-5 waters. Soak for 1/2 hour, drain and keep aside. 2Cups water; 2 onions chopped fine; 1/2 lb tomatoes, finely chopped; 1/2 Tsp turmerc powder; A few mint leaves; 1" Ginger piece; 7-8 garlic flakes; juice of 1/2 lemon; Green Chilies and salt according to taste; 2tbsp Oil or Ghee; Method: 1. Grind ginger, garlic and green chillies to a paste. 2. Heat oil or ghee, fry the onion till brown. Add ginger-garlic paste, fry fr 2 minutes. Add chopped tomatoes, salt and turmeric powder. 3. Saute until the tomatoes are well done and the sauce is formed. Add strained rice and cook for 2 minutes. 4. Add water, stir and cover. Cook until rice is nearly cooked, about 10mts. Add mint leaves and lemon juice. Stir in gently the lemon juice and then add the mint leaves. Cover and remove from fire. Serve hot with curd.

These dishes can be served in Parties. In any North Indian festivals the main dishes served are Allo Puri and kadhu ke sabz Sweet sour Pumpkin- (Mitha Khata Khadu) Ingredients: 250gm Pumpkin (Phetha) 1C thinly slices onion 1-2 green chilies, chopped 1 tomato, chopped 1tsp Haldi (Turmeric) 1tsp chopped fresh Ginger 1tsp salt ½ -1tsp Sugar 1 -1 ½ tbsp. Amchur powder (dry Mango powder) ½tsp red Chili powder ½tsp red Chili flakes ¼tsp Garam masala 2tbsp chopped fresh Coriander leaves 4tbsp cooking Oil Method; Wash and cut the pumpkin, discarding the inside seeds and threads, into ¾“ pieces Heat oil on medium heat, and add onion, green chilies and ginger. Stir fry until the onions are light brown. Put in chopped tomatoes, cook for 2 minutes. Add pumpkin stir for a minute then add salt, red chili and haldi. Mix well stir in ¼ C water, cover and cook on medium low heat for 10-12 minutes or until the pumpkin is cooked and soft. The skin of the pumpkin should be quite soft. There should be a little liquid in it, if it is dry add 2tbsp more water to make the sabzi some- what watery. Stir in sugar, cook for 1mt. Then add amchur to the Khadu. Mix and cook stirring on high heat, uncovered for 1 minute. Lower heat and cook covered for 2-3 minutes more. Garnish with coriander leaves and serve hot with Puris or Parantha.
